Heritage Turkey Red Wheat is milled on stone grinders
at the Hoffman flour mill, just like it was done in the
late 1800’s! These products are unbleached and contain
no pesticides or preservatives. We recommend cold storage.
Whole Wheat Flour is flour that is ground from the whole grain and contains all the constituents of the wheat kernels.
Bolted flour is whole grain flour with the coarsest bran particles sifted out which makes it a nice compromise between hearty 100% whole grain and all purpose white flour. Bolted flour is ideal for when you want a lighter loaf or dough yet wish to retain the high nutrition found in the germ of the wheat berry.
Farina is a form of milled wheat often prepared as hot cereal. The word "farina" is Latin, meaning meal or flour. It is made from the germ and endosperm of the grain which is milled to a fine consistency and then sifted.
A wheat berry, or wheatberry, is a whole wheat kernel (except for the hull/husk), composed of the bran, germ, and endosperm.
Corn meal is a meal (coarse flour) ground from dried maize (corn).
Order at least 3 days ahead for flour product not already on the shelf.
